president of newly

Customized Training Solutions, New York,
in February. Prell will lead the charge to
counsel corporate hospitality clients looking
to gain experience and ways to improve their
operations. Most recently, Prell served as
president/chief executive of Professional
Culinary Institute, Campbell, Calif.

Renee Zonka, CEC, RD, CHE, MBA, a
member of ACF Windy City Professional
Culinarians Inc., was recently promoted
to dean of Kendall College School of
Culinary Arts, Chicago. In her new role,
she will be responsible for strategic
direction of the school’s culinary
programs. Zonka replaces Christopher
Koetke, CEC, CCE, a member of ACF
Windy City Professional Culinarians Inc.,
who has been named executive director
of Kendall College School of Culinary
Arts. Koetke is also vice president of
Laureate International Universities Center
of Excellence in Culinary Arts.

Chapter, recently earned the Dietary
Managers Association’s certified dietary
manager, certified food protection
professional (CDM, CFPP) designation.
The credentialing exam covered 10
competency areas and 269 specific
tasks. Wilson now joins the ranks of
12,000 CDM/CFPP professionals,
trained and qualified to administrate
nutritional principles required in today’s
healthcare industry.

AAC, has been
named manager/
executive chef,
Food & Nutrition
Services, at
Arrowhead
Regional Medical Center, Colton, Calif.
Eidem, who began at the center in
September 2010 in a temporary capacity,
accepted the position in March. His
department serves 3,000 meals a day, and
Eidem is focusing on offering healthier
choices. He was with Renown Regional
Medical Center, Reno, Nev., for 20 years.
Eidem is a member of ACF High Sierra
Chefs Association.
