Hassan Atarmal, owner of Fresh Mediterranean Express in Waukee, Iowa. His tofu, soy, ginger and
creamy mango dressing has proven so popular that he’s selling it in 8-ounce refrigerated containers
to go. “We have customers driving from out of town just to buy the dressing,” he says.
Fresh Mediterranean Express is a fast-casual restaurant serving Greek salads, falafel and hummus.
Atarmal came up with the dressing recipe a year ago as he experimented with ingredients, combining fresh
