Attend day one of the trade show and
support our loyal sponsors and exhibitors
who support ACF. And don’t miss the exciting
competition lineup: the Student Team National
Championship, followed by the popular team
lunch, ACF Pastry Chef of the Year and the
Baron H. Galand Culinary Knowledge Bowl. The
2013 National Championship Collegiate Dining
Challenge will also be held, and ACF Chef
Educator of the Year finalists will compete for
the national title. On day two, Wednesday, the
competition lineup continues with Student Chef
of the Year and U.S.A.’s Chef of the Year™.
AAC DINNER
The American Academy of Chefs welcomes
new inductees and presents awards at this
gala dinner. The evening begins at 6: 15 p.m.
with a reception in the foyer of the Nolita
Ballroom at The Cosmopolitan of Las Vegas,
followed by induction of new Academy Fellows
and dinner in the ballroom.
GENERAL SESSION
The second session features Rick Moonen, chef/
owner of rm seafood, Las Vegas, and Farmer
Lee Jones, owner of The Chef’s Garden, Huron,
Ohio, discussing the farmer/chef collaborative.
The Farm to Table Lunch that follows is an
opportunity to continue the discussion.

TOUR TIME
Spouses and families can tour Hoover Dam,
named one of the top- 10 construction
achievements of the 20th century. It was built
during the Great Depression, and the builders
overcame technical challenges to erect one of
the greatest engineering works in history. This
concrete arch/gravity dam spans the Colorado
River at the Arizona/Nevada border.
AAC SPOUSES BRUNCH
This popular event for spouses/friends of AAC
members is at The Las Vegas Country Club
with Michael Carrigan, the club’s executive
chef, as host. It begins at 11: 30 a.m., and
transportation is provided.
PRESIDENT’S GRAND BALL
