Center, Lebanon, Pa., and Brian Peffley,
CEPC, CCE, AAC, a pastry-arts instructor
at the school, both members of ACF Harrisburg
Chapter, recently partnered with the Pennsylvania
Farm Bureau to create recipes using Pennsylvania
produce. Their first creations appeared in the March/
April issue of Keystone Country.
Thomas Macrina, CEC, CCA,
HGT, AAC, who served as AAC chair from
2007 to 2011, was honored at ACF Chicago Chefs
of Cuisine Inc.’s 30th regional American Academy
of Chefs Dinner at the Renaissance Chicago
Downtown Hotel in November. Those celebrating
with Macrina included Stafford DeCambra, CEC,
CCE, CCA, AAC, current AAC chair; Michael Ty,
CEC, AAC, national president; and Mark Wright,
CEC, AAC, current AAC vice chair. Macrina is a
member of ACF Philadelphia Chapter.
Patricia McClay, CEC, CCE, dean
of the Academy of Culinary Arts at Atlantic
Cape Community College, Mays Landing, N.J., a
member of ACF Professional Chefs Association
of South Jersey, was recognized as the chapter’s
Educator of the Year during its 38th annual
President’s Scholarship Ball in February. McClay
was selected because of her knowledge, skills
and expertise, and for having enhanced the
image of the professional chef.
received the Department of the Army’s
Commander’s Award for Public Service
Roland Schaeffer, CEC, AAC, HOF,
March 9 during the 37th Annual Military
Culinary Arts Competition at Fort Lee, Va.
The award, the fourth highest honor the
U.S. Department of the Army can bestow on
a civilian, was presented to Schaeffer “for
exceptional service as the Team Advisor,
Culinary Judge, and Apprentice Team Coach
for the United States Army Annual Culinary
Arts Competition and the United States
Culinary Arts Team during the period of
February 1985 to March 2012.” The award
cites Schaeffer’s professionalism and service
to the competition and the team, and the
foodservice initiatives with the late Lt. Gen.
John D. McLaughlin that contributed to the
growth, success and viability of U.S. military
foodservice chefs worldwide. Schaeffer is a
member of ACF Pittsburgh Chapter.
