Richard Rosendale, CMC, executive chef at The Greenbrier,
White Sulphur Springs, W.Va., an ACF national member, is one of
four finalists selected to compete this month in the Bocuse d’Or
USA national competition. The winner will represent America in the
international competition in France in 2013.
Eric Stein, MS, RD, a member of ACF Windy City
Professional Culinarians Inc., joined the staff at Kendall College
School of Culinary Arts, Chicago, as an instructor in November
2011. Stein, who specializes in nutrient-rich foods and global
flavor profiles, previously worked at The Greenbrier, White
Sulphur Springs, W.Va.

DeJuan Roy, a member of ACF Central Florida Chapter,
was hired as executive chef by Alhambra Theatre & Dining,
Jacksonville, Fla., in November 2011. Previously, he worked as
executive chef at 95 Cordova in St. Augustine, Fla.
Scott Ryan, CEC, executive chef at The Country Club, Pepper
Pike, Ohio, a member of ACF Cleveland Chapter Inc., was named
the chapter’s 2011 Chef of the Year in October 2011 at its annual
awards brunch held at Kirtland Country Club, Willoughby, Ohio.
