Every year,
the American
Academy of
Chefs Chair’s
Medal is
bestowed on
one Academy
Fellow who
has demonstrated exemplary dedication
and made outstanding contributions to
the culinary profession. This individual has
also maintained the highest standards and
ideals;of;the;Academy;and;has;significantly
and positively worked to ensure excellence
among future culinarians. It is the highest
honor an Academy Fellow can receive.
KAUFMANN RECEIVES 2010 AAC CHAIR’S MEDAL
This year’s recipient, John Kaufmann,
CEC, AAC, a retired chef-owner, is
well-deserving of this honor. He actively
volunteers his time as co-founder and
president of the Chicago Culinary Museum
and Chefs Hall of Fame, is chair of Les
Amis;d’Escoffier;Society;of;Chicago;and
is the professional liaisons committee
chair for the American Academy of Chefs.
He also volunteers in the U.S. Navy’s
Capt. Edward F. Ney Memorial Awards for
Outstanding Food Service program. His
charitable activities include establishing
the Charlie Trotter scholarship fund and
chairing numerous fundraisers.
Kaufmann has chaired more than 100
committees and has been president and
a life member of several organizations,
including the International Food Service
Executives Association and Les Amis
d’Escoffier;Society;of;Chicago.;He
has received several ACF President’s
Medallions and, in 2002, the ACF Chef
Professionalism Award and the AAC Chef
Good Taste Award.

SELECT DIGITAL NCR TO BE ENTERED IN DRAWING FOR 2011 ACF
NATIONAL CONVENTION PRIZE PACKAGE
To show appreciation for ACF members
who choose digital NCR, ACF will enter
them in a drawing to win a 2011 ACF
National Convention prize package.
One lucky winner will receive two full
convention registrations, airfare for two
and;a;five-night;stay;(July;22-26);at;the
Gaylord Texan, Dallas. Members who
have opted in to receive digital NCR by
July 26 will automatically be entered in
the drawing. The drawing will take place
during General Session at the 2010 ACF
National Convention. You do not need to
be present to win; however, if the winner
is present at the time of the drawing, he
or she will receive $200 cash. The 2011
ACF National Convention takes place at
the Gaylord Texan July 23-26. The prize
package is nontransferable.
