Sunkist presents 2010 Fresh Citrus Report
Sunkist Growers, Sherman Oaks, Calif.,
released its 2010 Fresh Citrus Report earlier
this year. The report covers naval oranges,
lemons, grapefruit, limes, specialty citrus,
tangelos and more. Here are a few highlights:
• This season’s navel crop is projected to be
an estimated 16% larger than a year ago,
providing good supplies through May.
• Pricing for lemons is expected to be normal
and stable this year. In addition, there will be
a good supply of organic lemons.
• There are many mandarins, tangerines
and tangelos available through January,
including Clementine Mandarins, Fairchild
Tangerines, Dancy Tangerines and
Orlando Tangelos.

Sullivan University offers new beverage-
management degree
Sullivan University’s National Center for
Hospitality Studies, Louisville, Ky., recently
launched an associate of science degree
in beverage management. Courses are
administered online, and the curriculum
can be completed in as little as 18
months. The program is directed by Albert
Schmid, CEC, CCE, CCA, author of The
Hospitality Manager’s Guide to Wines,
Beers and Spirits (Prentice Hall, 2003)
and The Kentucky Bourbon Cookbook
(University of Kentucky Press, 2010).
Students will study production, marketing,
alcohol safety, food-and-beverage pairing,
mixology, purchasing and storage, and
will learn how to write a business plan for

Dole offers resource for cooking for kids
Dole Food Company, Inc. is offering two tools
on its Web site to help operators with menu
development for kids and “tweens.” Chefs
can view a short video, "Kids Speak Out on Kids’ Menus," which uses interviews with average kids to pinpoint what they like about eating in restaurants, the menu items they prefer and their views on healthy eating. In addition, a PowerPoint presentation delivers children’s menu research results, along with

The Chilean Fresh Fruit
Association’s second
annual Fresh Fruits
from Chile Fresh ’N
Fit Recipe Contest is
underway, challenging
college and university foodservice
professionals ( 18 years and older) to
incorporate fresh seasonal fruit into their
menus. Recipes must be original and
must use at least 1 cup of fresh Chilean
fruit. Judges will award four $500
first prizes in each of four categories:
breakfast, lunch, dinner and dessert.
A grand-prize winner, selected from
the first-place winners, will receive an
all-expenses-paid trip to Chile in early
2011. Deadline for recipe submissions
