fennel in a lemon/fennel sauce as “a boat of scallops in a lemon sea.” Every plate, from
the red mullet to the Limousin beef, is artful without a jumble of ingredients.
Brasserie du Royal in the newly renovated Royal Savoy Hotel in Lausanne presents
casual elegance and murals emphasizing Grecian sports, a nod to the city’s prominence
as the headquarters of the International Olympic Committee. With French Michelin-
starred chef Marc Haeberlin as consulting chef, executive chef Julien Krauss presents
the signature Brasserie dish of slow-cooked egg with morels and white asparagus, and
creative fish dishes such as cassolette of snails and candied cod with bacon, from the
neighboring canton of Valais, in a shellfish emulsion.
There are many outstanding restaurants in the Valais, a major winegrowing area
located southeast of the Lake Geneva region.
Dining in Alpine Southwest Switzerland
Overall, the Valais is more Alpine and culturally German than the French-influenced
Lake Geneva region. But the atmosphere at Restaurant L’Enclos de Valère in Sion, the
capital of Valais and the town with the most sun-filled days in Switzerland, mimics the
French Riviera. The name refers to a “secret garden,” and in summertime, the patio,
with flowers, olive and fig trees, belies Sion’s proximity to the Alps.
Chef Antoine Bornet serves dishes such as mushroom millefleur with tomato and
saffron (locally produced) garnish. Fera, a farmed fish from Lake Geneva, is prepared
with seasonal vegetables. For dessert, fruit pies with Valais apricots are well-known.
The village of Visperterminen, high in the Valais Alps features raclette, a favorite
shepherds food of the area. Restaurant Sterner serves raclette using the traditional warming
unit designed to fit the local AOP-protected raclette cheese. The side dishes include a
basket of warmed quartered potatoes, gherkins and a mustard-inflected French dressing.
